When I was working on my homemade chili paste (coming soon! ), I came up with something similar to this recipe; it was too thin to be labeled a paste, but it was still 100% worthy of adding to a variety of dishes — welcome this delectable sauce!

I HAVE SOME FOXY SUGGESTIONS FOR YOU!
- Slice the chilis open and scrape off the seeds before cutting to keep the sauce from becoming overly fiery.
- Pulse the ingredients in batches until they're very small yet still discernible. Do not make a paste out of them.
- No problem if you don't have a food processor or a blender. You can either manually chop the ingredients with a sharp knife or use a mortar and pestle. Just be sure to fully wash your hands afterward.
- You can use whichever vinegar you have on hand, but cane or rice vinegar will make the sauce tangy without being overly acidic.
